Garlic scapes form on hardneck garlic, similar to the flowering part of other alliums. They have an amazing mild garlic flavor that mellows when roasted or sauteed. Our family loves them tossed with olive oil and grilled (think asparagus meets garlic) or sauteed with fresh zucchini, and they are popular battered and fried at out pumpkin patch every year! They also make a great pesto, we have found it is a little strong fresh but mellows when frozen. Garlic scapes can be frozen.

Scapes come in a reusable microperforated bag and should keep refrigerated in the bag for up to 2 weeks. They may also be frozen or dried. Different varieties have slightly different looks and flavors, all of them mellow when cooked. There are aprox. 40 scapes per pound, aprox 1 gallon ziplock bag.

This is our newest variety, it produces small, flavorful, very hot bulbs that sweeten with cooking. Honestly one of our favorites for flavor but does have small bulbs. Scapes have elongated oriental looking caps. Originated in South Korea. We are still learning what it will do and are selecting for larger bulb size. Bulb size is predominately 1 3/4 inch bulbs.

Won “Very Best Softneck” Excellent for braiding. Long lasting mild flavor with just a hint of hot. Flavor can get stronger in storage. Inchelium Red is from the Colville Indian Reservation in Inchelium Washington. This variety is easy to grow and produces large bulbs with dense cloves that store well. Expect 10 to 20 cloves per bulb. Approximately 70 to 80 cloves per pound.

This gourmet garlic is famous for its rich, robust, earthy flavor. It produces nicely shaped bulbs with reddish-slashed coverings. Bulbs contain 8 to 12 buff to red colored, easy to peel cloves. This variety is a long time favorite of chefs and market gardeners. Cure well for medium storage. Approximately 50 to 60 cloves per pound.

Hot and spicy with a long lasting bite.  This excellent porcelain garlic produces large clean-looking, symmetrical white bulbs with some of the largest, easy to work with cloves.  Each large bulb will contain 4 to 6 extra large, rose-buff colored, easy to peel cloves.  If you are looking for big cloves this is it! Approximately 40 to 50 Cloves per Pound.

Hot! Very Hot! Not for the timid garlic fan. I'm not sure why this isn't our best seller. It has amazing flavor, very hot when raw that mellows with a hint of sweetness when cooked. The cloves are almost as large as Music but the bulbs are generally larger and have a few more cloves. It just performs well year after year. Korean Red is an early maturing garlic with a very unique top set that can grow up to 18 inches long, looks very oriental. This variety produces large, purple striped, round bulbs containing 6 to 8 large purple cloves that are very easy to peel. Medium Storage when cured well. Approximately  50 to 60 Cloves per Pound.

This wonderful garlic is the new rising star in gourmet garlic. Chesnok has a strikingly beautiful color, a delightful aroma, and fabulous flavor. Excellent for cooking or baking, it keeps its shape and develops a wonderful flavor. Chesnok Red produces large purple striped uniform bulbs with about 10 to 12 cloves per bulb. It's origin is the Republic of Georgia. This is by far our best selling, largest, and easiest to grow hardneck! Medium storage when well cured. Approximately 50 to 60 cloves per pound.

German Red garlic is strong and spicy. This variety does well on our farm because it develops better quality and size where winters are cold. This is a favorite for chefs and foodies for flavor!

German Red produces nicely rounded bulbs with purple-splashed outer skins. The cloves are reddish brown, and each bulb will have between 8 to 12 cloves.  The clove skins have great color and are very easy to peel. Medium storage when well cured.
